What gets planted sets the water demand for the entire season. A crop that needs a long, hot growing period in a region with a short wet season will require irrigation no matter how precisely it is scheduled.

Why farmers plant thirsty crops in dry places

Usually because the economics say to. Market prices, contracts, subsidies, available equipment, and local processing infrastructure all shape what is plantable in practice. A grower who switches to a lower-water crop may find no buyer within a reasonable distance.
